Well... As there's no evidence she favoured Remus in any way (unless correcting him about her preferred nickname is a sign of love) during OOtP, I tend to think that it began later. Then, we know it was in place by the end of the summer. So, in my little timeline, it happened sometime around Remus visiting her in St. Mungo's (which is something he would totally do) after the battle at the DoM, and likely grew from there. Especially if he was hurting and she thought she could comfort him. That's a classic infatuation scenario. Only it didn't work because having her go all mousey-haired wasn't the kind of comfort he needed. He needed someone to listen, that's why he talks to Harry so readily at Christmastime. At least, I think so.
